A healthier version on a special sweet treat to kick off the new year, with thanks to Nutritionist Tammy Mond.
1/2 cup natvia sweetener
1/3 cup melted butter
2 teaspoon vanilla essence
2 cups plain flour or option to use almond meal if you prefer
1 teaspoon baking soda
1 teaspoon salt
1-2 cups dark chocolate chips
Pre heat oven to 375ºF.
Prepare baking tray. I used baking paper but you can spray baking tray with nonstick cooking spray if you prefer.
In a bowl mix together the natvia sweetener, butter, vanilla and eggs.
Stir in the flour, baking soda, salt and chocolate chips.
With a spoon, scoop some dough and roll into a ball. Repeat, making sure you leave some space between each cookie.
Flatten the balls.
Bake for approx 10 – 12 minutes or until cookies are lightly brown and golden.
Remove cookies and let them cool before serving.
