Insulin helps regulate and balance our blood sugar levels but did you know that cinnamon can do the same thing? Cinnamon contains polyphenol antioxidants and these antioxidants can help balance our blood sugar levels, like insulin does. Balanced or regulated blood sugar levels allows our muscles to gain adequate access to energy and glucose stores when needed during exercise. This is important for runners as having regulated or balanced blood sugar levels allows runners to get glucose into their muscles faster to help maintain energy levels when needed. Balanced and regulated blood sugar levels also decreases any risk of energy levels becoming depleted.


Ingredients

  • 2 cups all purpose flour
  • 1/2 tablespoon baking soda
  • 2 teaspoons cinnamon
  • 2 large eggs
  • 1/2 cup milk, of choice
  • 1 cup plain Greek yoghurt
  • 1/4 cup liquid stevia
  • 2 teaspoons vanilla essence
  • 30 grams butter, melted
  • 2 large apples, shredded 
  • Pinch of salt

Method

  1. Preheat oven 180 degrees Celsius and prepare muffin cups.
  2. In a bowl add the flour, baking soda, cinnamon and salt. Whisk together.
  3. In a separate bowl add the eggs, yoghurt, liquid stevia, butter, vanilla essence and milk. Mix well.
  4. Combine the mixtures together into one bowl and then add the apple. Mix well.
  5. Pour mixture into muffin cups (about 2/3 full).
  6. Bake for 25 minutes.
  7. Allow to cool before serving.
