Cauliflower contains many nutrients, including folate. Folate is great for runners as it helps our bodies convert carbohydrates into energy. This is essential for runners as it helps to fuel our muscles for exercise.

Ingredients
  • 2 cups plain flour
  • 120g cauliflower (florets)
  • 1/2 cup cheddar cheese or cheese of choice
  • 60g butter, soft
  • 4 tbsp plain yoghurt
  • 2 large eggs
  • 1 small egg (for egg wash over the dough before baking, optional)
  • 1 tsp baking powder
  • Pinch of salt
Method
  1. Preheat the oven 180 degrees Celsius.
  2. Chop cauliflower and place into food processor and mix until crumbly. Place in a bowl and set aside.
  3. Grate cheese and place in a separate bowl and set to the side.
  4. In a third bowl add the flour and baking powder together. Mix.
  5. In a fourth bowl add the butter, yoghurt and eggs. Mix until smooth.
  6. Add the cauliflower and cheese to the wet ingredients mix.
  7. Add the rest of the dry ingredients.
  8. Mix to form a dough and roll out to about 3cm thick.
  9. Using a circle shape dough or cookie cutter, cut out circle shapes in the dough. (You can use open side of a glass cup).
  10. Crack last egg and paint over dough (optional).
  11. Bake for approximately 20 to 25 mins.
